Mixing bowls are available in glass, stainless steel, ceramic and plastic. The stainless steel and plastic are very handy as they don’t break if they are dropped. The average kitchen needs to have a least 1 large, 1 medium and 2-3 small mixing bowls. Egg-whites for meringue or pavlovas should preferably be beaten in glass or stainless steel.

Beaters and whisks are used to put air into different types of foods to make them lighter or to increase their size. Some of the things we can whip air into are eggs, egg-whites, cream, ice-cream, gelatine desserts, potatoes, cakes and sponges. An electric mixer is easier to use for large quantities or for those that need a long whipping time so that your arm doesn’t get tired. Wire whisks can be used for smaller quantities.
