Made from rice-flour, water and salt, rice paper sheets are round, tissue thin “crepes” that are dried on bamboo mats in the sun, which results in the criss-cross pattern on each sheet. Rice paper is used for wrapping Vietnamese spring rolls and small pieces of meat. The sheets are dry and brittle and need to be soaked in warm water for a minute or until pliable prior to using.
