Ginger is the root of the ginger plant or more correctly a rhizome or underground stem. Native to the tropical jungles of South East Asia it is highly prized for cooking as an aromatic and for its properties as medicine. It is believed to aid digestion, nausea and coughs. The papery bark of the ginger should be peeled and flesh grated, finely shredded or chopped before using in savoury or sweet dishes.
