Kaffir lime

Kaffir Lime has a fruit dark green in colour with a wrinkled and bumpy skin. The leaves and rind have a special fragrance of their own and are used in Thai and South East Asian cooking to give a unique flavour. The rind of Kaffir limes is used for an intense citrus flavour. The leaves are available in Asian food stores either fresh dried or frozen. The fresh leaves are recognised by the two joined leaves on a stalk with one leaf smaller than the other.

  • The fresh leaves can be very finely shredded and added to salads and sprinkled over curries and stir-fries.
  • Add shredded leaves to Thai dressings.
  • Add shredded leaves to chicken or crabmeat patties.
  • Place leaves alternately onto kebab skewers between chicken or seafood.
  • To store Kaffir lime leaves place into a small container in the refrigerator, will keep fresh for up to one week.
